Definitely go axes, the 5% extra crit is much more beneficial than 6% chance at extra attack. As for which stat to prefer over others, you need to hit 5k HP unbuffed with stamina, 950~ attack power with strength and enough +crit/agility items to hit 25-27% crit chance in berserker stance. This is of course at level 60.
For builds you have a few choices (the talents might not be exactly as listed as this is off the top of my head):
Arms/fury Mortal Strike - This build concentrates on quickly dealing 2.5-3k damage in very little time (you can usually pull it off with MS crit, followed by a normal attack crit and execute).
Talent distribution:
Arms
2/5 deflection
3/3 improved rend (prereq for deep wounds.)
5/5 tactical mastery (this is a must no matter what build you use)
1/1 anger management
3/3 deep wounds (this will help against rogues a lot, and is a prereq for impale)
2/2 improved overpower
1/2 improved charge
2/2 impale
5/5 2 handed weapon specialisation
5/5 axe spec
1/1 sweeping strikes (prereq for MS)
1/1 Mortal strike
Fury
5/5 cruelty
5/5 imp demoralising shout
1/1 piercing howl
3/3 blood craze
1/5 imp battle shout
5/5 enrage
This is your basic cookie-cutter mortal strike build. It also favors using a high damage weapon (like arcanite reaper). It's the favored build for many warriors and I've used it up to 60. PvE wise, there isnt much of a problem with this build until you hit MC, due to the debuff limit. PvP wise, if you have a healer backing you, there is no bad match-up.
